You need this Vegan Baked Pineapple
Actually what you need is to pre heat the oven at 180 degrees, because this will be very fast to prepare.
Pineapple gets more juicy in the oven, all its sweetness comes out, combined with coconut pieces and banana, some coconut yogurt, this combination of warm, cold juicy and crispy is all I can give you for the best baked porridge you will have.

-160 gr mix of milled or rolled grains (oat, rice, buckwheat,..)
-plant based milk
- 2 tsp sweetener of choice (I've used agave nectar)
-grounded flax seed
-very ripe pinepple
-handful of sunflower seeds
-coconut (fresh is best)
-leavening agent (I've used 1/2 lemon juice with 1/2 tsp baking soda, but baking powder is also ok)
-coconut yogurt (optional)
Method (for 2-3 person):
Spread some coconut oil in a baking dish, combine everything except for the seeds and banana) and mix, it should be enough liquid to cover it slightly but not too much.
Lastly add the sunflower seed and bake for 25-30 minutes.
Is ready when it gets a bit brown and crispy on the top.
