Yes, I love sweet potato, and I eat them also for breakfast.
So versatile, for its sweetness I decided to use it as bowl, with some fresh fruit.
No convinced? If you don't like the sweet version you can instead fry an egg and smash some avocado inside.

Ingredients (for one person):
-1 sweet potato (orange, white or purple all are great)
-roasted cashews
-blueberries
-cottage cheese
-rasperries
-banana
Method:
Turn on the oven at 200 degrees Celsius (392 °F)
Make some holes all around the potato with a fork and place on a tray with parchment paper for 30/45 minutes (depends on the dimension).
*baking instead of boiling gives extra sweetness and taste to the sweet potato.
Is ready when soft at touch.
Garnish with the rest of the ingredients, enjoy warm.
