pink crepes for your best

This is my first recipe I post on my website.

Not a fan of all the events of every kind but yesterday was my girlfriend Birthday, tomorrow Is Valentine day and the day after is my Birthday.

So a pink colorful breakfast is exactly what I decided to make to celebrate love of every kind.

For the people I love, for the people around me, for myself and for you!


 



Recipe


Ingredients for 2 people:

- 160 gr wholegrain flour (can also be rice, oat, buckwheat ...)

- plant based milk of choice (enough to get a creamy consistency)

- vanilla powder

- one boiled or roasted red beet

- two eggs

- pinch of sea salt


*for a vegan version for half the flour use buckwheat flour or groats if soaked overnight (it binds everything together) and add 1/2 banana (grounded flax seed work as well).


Method:

Beat well the eggs, add some milk and then slowly, all the wet ingredients.

You can also use a blender.


Heat the pan with some coconut oil or ghee and form the crepe.

If you want a more crispy result you have to make a thin layer on the pan, this means the dough consistency should be more fluid.


Serve with banana, pomegranate seeds and persimmon.

Tahini or any nut butter of choice is highly suggested.

Coconut yogurt is a must!
